The Impact of Fermentation Diversity on Brandy Blending: Insights from a 5-Year Study in Cognac
Join Us Virtually
Event Details
Join us on December 17th at 4 pm PDT as Denise Jones presents a virtual encore presentation of her well-received PBS Conference Session. A 5-year study conducted in the Cognac region was reviewed, highlighting the critical role of fermentation diversity and congener development in crafting exceptional grape brandies.
Key learning objectives included:
-
Yeast Strain Selection: Distillers will learn how selecting specific yeast strains can significantly influence flavor profiles, especially during maturation, adding depth and complexity.
-
New Fermentation and Blending Ideas: Fermentation professionals are introduced to innovative methods to enhance their fermentation processes and spirit blending strategies.
-
Yeast Strains for Fruit-Based Fermentation: working with fruit in fermentation offers valuable insights into yeast strains that produce congeners capable of developing complex flavors and aromas through trans-esterification during maturation.
This study underscores the importance of thoughtful fermentation practices for achieving unique and refined brandy blends as well as other spirits and fermentables.
