There is no doubt that sour beers are a fascinating ferment. And what’s even more fascinating is Victory’s robust souring program! That will be the topic of the day when we head to Victory’s Parkesburg facility. Our member, Mallory Zakeosian, will lead us on a production tour with a special look at Victory’s souring program and delve into how they utilize it to adjust mash pH and acidify their sour brews.
